The Heritage Pork Chop has been on the menu at Fort Oak since the early days. A best-seller that’s turned into a Chef Wise classic, the dish starts, as all good things do here, with the fire and the hearth. The shish*to peppers, and potatoes take on a deep char, while the pork is brined then grilled, seasoned with nothing more than a little salt and pepper.

The star of the show here is the black garlic sauce. Black garlic is sweet, savory, bursting with umami - we turn these fermented bulbs into a glaze - and use as the finisher you didn’t know you needed, but now, you could hardly live without.

Fresh picked herbs, ginger, and crunchy garlic chips top the dish as it heads to the pass, bringing a brightness and contrast to the smokey components underneath.

To get to Fort Stockton in San Diego, you can take the bus and get off at the Fort Stockton Dr & Hawk St station. From there, it's a short walk to the destination. Alternatively, if you're driving, take the 8 freeway and exit at Waring Rd/Fairmount Ave. Turn onto Ward Rd and continue onto Fort Stockton Dr. You will need to find parking in the area, as street parking is limited. There are several paid parking lots nearby that you may wish to consider.
