Branzino has been a culinary delicacy since the days of Ancient Rome. Prized for their mild, subtly sweet flavor, and flaky, melt-in-your-mouth texture, it’s long been a staple in Mediterranean cuisine - and now, here.
Chef sears the fish skin-side down in the hearth, letting the skin sizzle and crisp. Cooked in a savory charred leek butter, fregola, an ancient, toasted pasta from Sardinia is mixed with confit tomatoes, caper berries, and kalamata olives bringing a balance of nutty, earthy, and aromatic notes to the light, bright white fish. Tomato basil oil and a charred lemon finish the dish.
If you ask the team (and you should), they love it because it tastes like spring - fresh, alive, vibrant and joyous. Joyous? Yes, a dish can be joyous. Try it for yourself.
