Chef Jason Knibb and Chris Simmons, Tequila Ocho National Agave Ambassador, have finalized the menu for From Ocho to Nueve-Diez, an intimate tequila pairing dinner next month.

Developed through hands-on tastings and collaboration, the evening pairs Chef Knibb’s contemporary coastal cuisine with Tequila Ocho’s single-estate expressions, each course building in depth, balance, and flavor.

Great dinners don’t start on the plate! They start with conversation. Chef Jason Knibb and Chris Simmons, Tequila Ocho National Agave Ambassador, came together to taste, discuss, and thoughtfully develop the menu and tequila pairings for From Ocho to Nueve to Diez, our upcoming pairing dinner being held next month.

Each course is being crafted to highlight how Tequila Ocho’s single-estate expressions, Plata, Reposado, Añejo, and Puntás, interact with flavor, texture, and balance, creating a seamless progression throughout the evening.

This collaborative process is what is going to make this pairing dinner experience truly special. And why we’ve intentionally limited the dinner to just 24 guests.

This July, we’ll celebrate 25 years in the Village, and we couldn’t be more excited for what’s ahead. What a fantastic day in La Jolla! The Grande Colonial Hotel, La Jolla and NINE-TEN Restaurant & Bar crew showed up in full holiday spirit for the 69th La Jolla Christmas Parade this past weekend. And we were SO proud to cheer on our GM, Kim Avant, who was selected as this year’s Heritage Marshal! Kim rolled through the Village in a gorgeous 1960 Cadillac while our team marched behind with candy canes, a festive golf cart, and lots of holiday cheer. Such a fun day celebrating our community, our history, and our amazing team. Happy Holidays!

The Prospect Street in San Diego can be reached by public transport through the San Diego Trolley system. The Green Line connects Old Town Transit Center to the Convention Center and Gaslamp Quarter stations, which are both within walking distance of Prospect Street. Alternatively, one can take a bus to La Jolla Cove via Route 30 or Route 34.

If driving, take I-5 North and exit at La Jolla Parkway. Turn left onto Torrey Pines Road then turn right at the next stoplight onto Prospect Street. There is limited street parking available on Prospect Street and surrounding areas but paid parking lots are also available nearby for convenience.
