Kalei's Kitchenette Kalei's Kitchenette is a family-owned Hawaiian restaurant catering pacific rim cuisine all over San Diego. Located at the heart of Rancho PQ, customers can satisfy their cravings for Hawaiian fusion food between 11 am to 2 pm from Tuesday to Saturday. With a limited menu, customers can have a sneak peek of what's to come in this new eatery. Don't forget to park on the side street and enjoy traditional Filipino Lechon for those special occasions. Behind the scenes of catering, pt. 3.

A week or two before the event, Chef Andy gets back on the phone with the client. They go through the menu line by line, confirm every dietary restriction, and make sure nothing has changed.

Then comes the site inspection, walking the space to map out where everything sets up, where food stages, where the team moves, and where breakdown happens.

By the time we show up day-of, every detail has already been decided.

What is lau lau?

Pork wrapped in taro leaves, then steamed low and slow until everything melts together. The leaf does the work. It traps the moisture, the flavor, everything.

It is one of the most traditional Hawaiian dishes you will ever eat. And we make it the way it was meant to be made.

Day 3 at the National Restaurant Association Show and Chef Andy had two things on his mind.

First, kitchen equipment that actually saves time without cutting corners on quality. Second, plant-based alternatives that are changing the game for guests who just want a break from meat. Not vegan. Not vegetarian. Flexitarian.

We tried jackfruit that had the texture, consistency, and look of chicken. Then a shredded vegan brisket that honestly had no business tasting that good.

Also… rolling out spamdog? Did not have to overthink it, and just took a bite. It was good!

Day 2 at and we’re already in problem-solving mode before we even walked through the doors.

Chef Andy and Khara were talking through something that seems small but actually matters a lot: packaging consistency at the shop. When your to-go containers are all different depths, different brands, one looks deep, one looks flat, the food doesn’t land the same way every time. And when the paper gets moist and starts breaking down on hot food? That’s not the experience we want to hand someone.

No operations department. No procurement team. Just two people who care about every detail figuring it out on the fly.

This is what running a small restaurant actually looks like.
