When Covid happened... Let's just say things got weird...
So weird that on March 15th, 2020, the Simply Fresh food truck lost every future location on our calendar. With nowhere to go & no one to feed, I solemnly drove home & parked the food truck in front of my house unsure how I would be able to pay our next month's mortgage...
I started the next day by cooking for the only people I knew I could feed... My wife & kids...
Hours later, my neighbors came outside and asked, "What are you cooking over here!?" And, "Can you please feed us!?"
Next thing I know, the word got out & more neighbors start showing up. Then faithful customers & life long friends who found out we were in fact still in business, started calling in pickup orders. A couple of weeks later my neighbor's band started playing music in their front yard bringing light & joy to a dark & uncertain time.
With restaurants closing left & right and groceries running out of essential items, my food truck, seemingly overnight, became a sort of lifeline for our Clairemont canyon community.
I was then able to bring back my employees & restart a business that I was almost forced to close...
To honor those times, which I can now luckily look back on fondly, we throw an annual neighborhood block party every summer. Right in front of my house. The neighbors, the band, the good vibes, the (new) food truck. Everything just as it was... except masks 😂🤣.
This Sunday. 5pm. 5350 Limerick Avenue. A reminder to never take anything for granted. So join us, everyone is invited, yes, even you! And let's have some good ole fashioned fun

On our last day of waking up in the magical Sierra Nevada Mountains, I prepared an array on campfire meals to spoil these little campers one last time!
First up... my favorite: Breakfast Nachos with taco seasoned ground beef, shredded Parmesan, Jalapeños Sauce, diced onion & homemade guacamole over tallow
For dinner I grilled two steaks over Mesquite wood & whipped up some Shrimp Alfredo Sourdough Pasta in our kitchen for the little campers! And can't forget dessert at Mcleod Lake... Our favorite place in all of Mammoth... Purple Dragonfruit from
I've made all of this before at home but I swear everything tastes better when you're camping 🏕️🥘🔥🏔️❤️

On this edition of campfire meals... I am beyond grateful to be cooking surrounded by the insanely beautiful Sierra Mountains! I may be off the food truck... But good lord I just can't stop cookin!!!
First up... My new take on onion rings but stuffed with Taco Seasoned Pasture Raised Ground Beef & wrapped in Free Range Bacon instead of the traditional flour egg wash. Crispy, hearty & addictive AF cuz you gotta get your veggies too 😉

We are beyond honored to be a part of Longfellow Elementary's end of the year celebration THIS WEDNESDAY from 4-7pm @ 4833 Doliva Dr in the heart of Clairemont... They cap off their school year every year with a salute to cultures all over the world! We are proud to be representing the island nation of Cuba by showcasing our Award Winning Cubano Panini, Arroz Con Pollo & Cilantro Lime Black Beans for all to enjoy! There will be live music, dance performances & food from all around the world ... including yours truly 😉

I'm giving myself 12 days to hike all 188 miles of the PCT from Mexico to Idyllwild. Walking to landmarks like Lake Morena, Mt. Laguna, Julian, San Felipe Valley, Eagle Rock, Paradise Valley & ultimately the little mountain town of Idyllwild...
I told my kids before I left... Do something hard while I'm gone... Push yourself... Because you never know what you're capable of... until you do it...
