On Thursday, June 4th, Bar Kamon will host a masterclass with Satoshi Sugiura of El Lequio, Okinawa.
This educational tasting and discussion will explore Okinawan spirits, regional identity, and modern Japanese hospitality through the lens of the Lequio Series.
The session will feature Kokuto de Lequio, Awamori de Lequio, and conversation surrounding Okinawan cocktail culture, spirit production, and hospitality.

Kanosuke Distillery — Kagoshima, Japan.
This week we’re exploring two sides of the distillery’s work.
First, selections from the rare Ghost Series, showcasing experimental cask maturation from Kanosuke’s early whisky program.

Hioki Pot Still — Pot-Distilled Grain Whisky
Three whiskies that reflect Kanosuke’s roots in Kagoshima and its evolving place in modern Japanese whisky. Due to the tropical climate in Kagoshima, Kanosuke’s whiskey is infused with a unique flavor profile from their cask aging — a deeper spice and interesting notes otherwise not found in traditional aging temperature ranges.

Janai Sazerac — The Sazerac That Isn’t
The Sazerac is a classic with a strict blueprint.
But the Taishō era — the moment we always look back to — was defined by reinterpretation. Western forms taken apart, studied, and rebuilt through Japanese craft.
That’s where Yokka koji awamori comes in.
Its fermented brightness shifts the whole geometry of the drink, pulling the classic into a new sort of balance.
Cognac lays the frame.
Akashi plum whisky adds quiet depth.
Raisin softens the edges.
Coffee, Peychaud’s, and an absinthe rinse keep the outline familiar.
It opens like a Sazerac…
then the koji steers it somewhere more earthy, umami, and more alive.
A classic re-drawn through Taishō sensibilities —
still a Sazerac, just unmistakably janai.

Shirataki brewery draw pristine, naturally coal filtered, snow-melt water from not one, but three different wells. It is this water that helps Shiratki make such elegant sake. And while people often think of nigorizake as creamy, sweet and simple, this is anything but. Using local Koshi Ibuki rice polished to an impressive 55% this is a layered, slightly dry nigori. Herbacous notes of mint pair with gentle fruity aromas of pear and banana, before yielding to a hint of marshmallow.

🌾Koda Farms and the Legacy of Uka Sake
California’s Central Valley lies Koda Farms, the oldest family-owned rice farm in the state. Founded in the 1920s by Keisaburo Koda, a Japanese immigrant with a vision, the farm became a cornerstone of Japanese-American agricultural history.
🍶Uka sake: The rice grown by Ross Koda, third-generation owner of Koda Farms makes its journey back to Fukushima, the Koda family’s homeland. There, it is transformed into a beautiful sake by Japanese brewers — a true emergence of tradition and innovation. Uka organic sparkling is always the fan favorites and you must try to have a toast to celebrate the world sake day!

We’ll be counting down the days by featuring the incredible sakes you’ll get to taste at the festival🍶🥳 Kicking off the countdown with Koedo Kagamiyama from Saitama, Japan!
Koedo Kagamiyama Sake Brewery is a historical brewery from Kawagoe, Saitama. Originally founded in 1875 as Kagamiyama Sake Brewery, it faced closure in 2000 due to a lack of successors. However, in 2007, a group of passionate young individuals revived the brewery, bringing back its rich traditions and the only sake brewery in Kawagoe today. Nestled in the Musashino region, Kawagoe is renowned for its sake brewing, thanks to its pristine, soft, and mellow subterranean waters flowing from the Chichibu mountain range. These waters, along with the region’s fertile rice fields, create the perfect conditions for crafting sake with a delicate, refined flavor.
