We’re pulling shots of it on the bar, and now you can too.

This is the washed process in action. 💧☕️
By this stage, the coffee cherry’s skin and fruit have already been removed. The beans, still wrapped in their parchment layer, are washed clean to remove any remaining sticky mucilage before heading off to dry.
This extra step is what helps create the clean, crisp, and vibrant flavors washed coffees are known for.
So next time you see “Washed Process” on your favorite bag of coffee, remember this!

To get to the coffee shop located on La Jolla Boulevard in San Diego, there are a few options for public transport and driving/parking:
Public transport:
- Take the bus to the stop on La Jolla Boulevard near Midway Street.
- Take the trolley to the station on Balboa Avenue and transfer to a bus going southbound on La Jolla Boulevard.
Driving/Parking:
- If driving from north of San Diego, take I-5 South and exit at Clairemont Dr. Turn right onto Balboa Ave and then left onto La Jolla Blvd.
- If driving from south of San Diego, take I-5 North and exit at Ardath Rd. Turn left onto Torrey Pines Rd, then right onto Prospect St. Finally, turn left onto Genter St before turning right onto Nautilus St which leads to La Jolla Blvd.
- There is parking available in metered spaces along La Jolla Blvd or in nearby parking lots.

Recently, they had a full circle moment when they visited their direct trade partners of Café Granja La Esperanza - Cerro Azul in Colombia and brought them a bag of their winning Good Food Awards, Cerro Azul Geisha. Produced by them and roasted by Bird Rock Coffee Roasters, it was shared together where it all began. This shows how much effort they put into nourishing and building these relationships to provide customers with exceptional coffee.
In addition to their commitment to quality coffee, Bird Rock Coffee Roasters also has a mobile espresso bus called babybirdbrcr that can be found at the San Diego County Fair until July 4th. Customers can enjoy their favorite BRCR beverage and even try a limited fair latte while enjoying the fair's festivities.
Recently, Bird Rock Coffee Roasters introduced a unique and delicious Blue Label from La Papaya that uses anaerobic natural processing. The ripe coffee cherries are picked, sorted, and cleaned before being placed into polyethylene tanks to ferment for up to 240 hours while being kept below 24 °C. The fermentation process naturally creates an oxygen-free environment that results in an exceptional cup of coffee.
