Established by Maximo Gimenez, a teacher who befriended American occupation troops stationed in Quezon City after World War II, the cafe initially served chicken, steak, and drinks. However, what made it popular among the Filipino community was Ruby's special recipe for chicken that became known as "Sarap to the Bones," which is still an iconic Filipino dish to this day. With nearly 200 stores across the Philippines and locations in the USA, Canada and The Middle East, Max's Restaurant has established itself as an institution and a proud Filipino tradition worldwide.
