Of course a Bridgerton Tea Party themed bridal shower wouldnāt be complete without a Victoria Sponge Cake.
The British classic Victoria Sponge Cake traditionally consists of a strawberry jam and either a light whipped cream or buttercream, sandwiched between layers of airy sponge cake, and topped with a dusting of powdered sugar. Cute and simple. But since we always do the most over here, you know we had to give it make over and make it GOODā¦
Our version for this cake kept the classic vanilla sponge, but was filled with a layer of seasonal mixed berry coulis + fresh berries, a layer of passion fruit curd + fresh strawberries, and Italian meringue buttercream (to help keep stable in order to withstand this summer heat). Making it light, refreshing, tart, and most of allā¦ not too sweet! Itās the perfect summer cake, if you ask us.
